Cheese Sticks Recipe : Halloween Witches' Fingers!

It's Halloween today and I was determined to make my own witches' fingers cheese stick recipe. While I was looking around for a good spooky recipe, I found this yummy puff pastry cheese sticks recipe. I thought it would be a marvelous idea to make witches' fingers in the form of pastry cheese sticks instead of the more traditional bread sticks or cookies. It's much lighter, less fattening, and it is easier to make.

And since I m a pianist, I m going to rename this  the 'Pianist Fingers Cheese Sticks Recipe', as I seriously cannot think of anything scarier than detached fingers!!!!!! Can you?

Ingredients

  • 1 cup shredded cheddar cheese  
  • 1/2 cup butter
  • 3/4 cup all-purpose flour 
  • sliced almonds (Carmen's touch)
  • 2 tablespoons corn-meal (Carmen's touch)
  • 1 egg
  • 1/4 teaspoon salt 
  • 1/2 cup of Shredded Parmesan cheese

Preparation (Carmen's touch)

  1. In a large bow, mix cheese, flour, salt, corn-meal and butter together.Then add egg and stir until dough holds together.
  2. Wrap dough plastic cling film and freeze for at least 30 minutes.
  3. Preheat oven to 350°.
  4. Roll out  the dough and cut it into strips then use your hands to make them into finger shapes. Place them on a large baking sheet. Sprinkle Parmesan cheese on top,  press half of an almond into each 'finger tip' to make 'nails'. 
  5. Bake the fingers for about 15 minutes.

    Bangers And Mash Recipe: Perfect Together

    Bangers and Mash is a traditional English dish that would definitely put a smile on anyone's face on any cold dark winter day. It's simple, filling and cheap, and it has been voted the most popular feel-good food in Britain according to The Telegraph .  It is easy to recreate this good ol' British flavourite at home. I recently have updated this easy bangers and mash recipe since my student years. 

    Don't forget to serve it with a cold beer for an authentic 'pub grub' taste!

    Cook time : 1 hour

    Serve : 2 -3 

    Estimate cost $ 8

    Ingredients:
    • 2 large potatoes, peeled and quartered
    • 1 pounds pork sausage
    • 1 teaspoon butter
    • 1/4 cup milk
    • 1 cup diced onion
    • 1 packet dry brown gravy mix
    • 1 cup water
    • salt and pepper to taste

    Preparations

    1. Place potatoes in a saucepan with enough water to cover. Bring to a boil, and cook for about 20 minutes. Drain, and mash with 1 teaspoon of butter, and milk. Continue mashing until smooth. Season with salt and pepper.
    2. In a large pan over medium heat, cook the sausage until heated through. Let the sausage cook while you make the gravy and potatoes. Be sure to flip the sausages every now and then. Remove from pan, and set aside. Add remaining teaspoon of butter to the skillet, and fry the onions over medium heat until tender. Mix gravy mix and water as directed on the package, and add to the skillet with the onions. Simmer, stirring constantly, to form a thick gravy.
    3. Pour gravy over sausages and mash.

      Vegetarian Spring Rolls Recipe: Perfect Cocktail Hour Snack

      According to my favourite TV series Mad Men, cocktail hour was very popular in the 50s. It was a nightly event where a lady would dress up and greet her man with a cocktail in hand at the door. I love the idea of bringing back Cocktail Hour with my husband so I figure these healthy vegetarian spring rolls can add a little after work cocktail hour spice. It's perfect as it won't fill you up too much but can prevent you from getting totally hammered. 
      Unless of course, getting totally hammered is what you're after! Or, if your name is Don Draper.


      Cook Time: 40 minutes
      Serve: 2-3
      Estimated Cost: $ 6

      Ingredients:
      • 1 cup Enokitake mushrooms
      • 1 small ginger, grated
      • 2  onion, sliced
      • 1/2 green bell pepper
      • 1 medium carrot, sliced
      • 20 sheet of spring roll wrappers
      • 1 cups bean sprouts
      • 1/2 cup fresh coriander, roughly chopped
      • 1/2 cup fresh basil, chopped
      • 1 tablespoon Worcestershire sauce
      • 1 tablespoon sesame oil
      • 2 tablespoon soy sauce
      Preparation:
      1. Place 2 tablespoons of oil in a large frying pan over medium to high heat. Fry onion and gingers for about 1 minute.
      2. Add mushrooms, green peppers and carrots, as you stir-fry, add in  the sauce. Stir-fry 1-2 minutes until vegetables have softened.
      3. Remove from heat and add bean sprouts, tossing to mix in. Make sure all the ingredients are dry before making the rolls.
      4. Take a sheet of spring roll wrapper, spread 1 1/2 teaspoons of the mixture on each sheet, moisten all the sides with beaten egg. Fold the 2 side edges and roll the sheet.
      5. Place the spring rolls in oil, fry them for about 1 minute on each side. They are done when they turn light brown. Drain them on paper towels. 
      6. Serve with soy sauce or rice vinegar.

      Salmon And Potato Fish Cakes Recipe: A New Take On A Childhood Favourite

      My beloved grandmother used to make lovely fish cakes, they were crispy and tender at the same time. I never got any tummy ache from them unlike that ready-made crap in the supermarket, which are often filled with things you would rather not eat.

       

      I never got to find out how my grandma made hers, but luckily I did find this Shredded Potato Salmon Cake recipe on Allrecipes.com. I did end up making some changes with the ingredients. Since I am sensitive to spicy stuff, I had to take out the banana peppers. I've also replaced the red bell peppers with green peppers as I prefer their stronger taste. I also used white onions instead of the red onions...Mmm.

       

      Cook time: 50 minutes

      Serve: 2 -3

      Ingredients:

      • 3 medium potatoes, peeled and shredded
      • 1/2 pound cooked boneless Salmon fillet
      • 3 eggs
      • 1 teaspoon Italian herbs
      • 1 large white onion, chopped
      • 1 green bell pepper, seeded and diced
      • 3/4 cup dry bread crumbs
      • salt and pepper to taste

      Preparation:

      1. Squeeze out as much liquid from the potato shreds as you can, and place it in a sieve to drain out the excess water. 
      2. In a large bowl, beat the eggs with salt and Italian herbs, and mix in with the potato shreds. Mix in salmon, onions, capers, green bell pepper and bread crumbs. 
      3. Make about 12 patties of about 1/2 inch thick by using your hands
      4. Heat 1/4 inch of oil in a large heavy skillet over medium-high heat. Fry the patties for about 3 minutes per side, or until golden brown. Drain on paper towels quickly before serving. 
      5. Serve with Salad  
      Husband Says: "I enjoyed Carmen's changes to the recipe. The green peppers gave it a stronger flavor to counteract the salmon somewhat, but not overpowering. Everything worked really well together. I also prefer white onion and think that change worked out. Absolutely delicious. Will visit Carmen's Kitchen again for the salmon cakes! Wonder what I'll have to tip her next time... 0_0"

      Fusilli with bacon and tomato sauce is a basic Italian pasta dish. Its a mid-week treat for a quick and easy to make after work dinner. It takes less than 20 minutes to prepare and cleanup is just ONE pan to wash!  It's tastes good, looks fancy and fills you up.

      Everybody loves Italian food, and I think everyone should learn how to cook some Italian dishes. It's not just tasty, it is one of the healthiest cuisines in the world. Traditional Italian cooking is basic and straight forward and makes good use of fresh ingredients. With a lot of Olive Oil, fresh veggies, pasta, and rice you can make delicious healthy food without burning a hole in your wallet.

      Cook Time: 20 mins

      Serves: 2-3

      Ingredients:
      • 1 pound thick-cut bacon diced
      • 16 ounces fusilli pasta
      • 2 tablespoons olive oil
      • 1 teaspoon salt
      • 2 tablespoons garlic, minced
      • 2 cups tomatoes, diced
      • 1/2 cup red wine
      • 1 medium onion, diced
      • 4 tablespoons mixed herbs
      • 1/4 cup freshly grated Parmesan Cheese
      Preparation:
        1. In a large pot, boil some water, when boiling add 1 teaspoon salt and the pasta and cook until the pasta is al dente.
        2. Fry bacon in a large pan until it is crispy. Remove  to drain on a paper towel-lined plate and remove 3/4 of the bacon fat from the pan. Add olive oil, onions and garlic, cook for 2 minutes. 
        3. Then put in the tomatoes, cook for 5 minutes, mix in the wine, simmer for 5 minutes
        4. Drain pasta and add to the tomato mixture pan. Add basil and bacon. Sprinkle Parmesan Cheese on top.
        Husband Says:"De-lish. Light and fresh but filling. Have this one with a glass o Vino."

        Shanghai Wonton Soup Recipe: Mama's Best

        Hong Kongers love their wonton soup, it's quick and cheap and oh-so-tasty! As a Hong Kong girl,  I too would choose to eat wonton soup over anything, any day.

        My mother makes the best wonton in the world. Just before I got married this summer she taught me how to make this wonderful dish. Lucky me and lucky husband!

        All the credit has to go to mum for this recipe, she's the brains behind this fresh take on the world-famous Shanghai Wonton.So without further delay, here's mum's famous Shanghai Wonton...with a Hong Kong twist.

        Cook Time: 30 minutes

        Serve : 2 to 4 
        Estimated Cost:  $7

        Ingredients:
        • 1/2 pound minced pork
        • 1 cup Pak choi, diced
        • 1 1/2 tablespoons fresh ginger , minced
        • 1 1/2 teaspoons sesame oil
        • 1 egg white
        • 1 tablespoon soy sauce
        • 1/2 teaspoon salt
        • 1/4 teaspoon white peppe
        • 2 dozens  won-ton wrappers
        • 1 tablespoon of  chicken stock
        • 1 teaspoon salt
        • 2 tablespoon of chopped coriander

        Preparation:

        Filling

        Put pork, pak choi, ginger, sesame oil, egg white,salt, soy sauce, and white pepper in a mixing bowl, mix them together using your hands


        How to fold wonton wrapper

        1. Put a teaspoon of wonton filling in the middle of the wrapper.
        2. Slightly wet the edges of the wrapping with a little bit of egg white, and fold the wrapper in half to make a rectangle, then seal the edges by pressing them together.
        3. Fold the wrapping one more time, this time moisten the 2 corners on the middle line, and pull them together, then press on it gently and make a what looks like a little bag. Repeat.
        4. Mix in the chicken stock with 4 cups of water, bring to boil and add in coriander. Once you add the coriander, slightly reduce the heat to just under a boil. 
        5. Put in wontons for 3-4 minutes. 
        6. Serve with soup.

        Pan-fried Pork Chops, Roasted Potatoes And Mixed Veggies Recipe : Home Comfort

        Having grown up in England, I have developed a special liking for all the hearty British pub grub, especially Sunday roasts .When I moved back to Hong Kong, where full-size ovens are not commonly present  in kitchens I discovered an alternative way of making these tasty pork chops by using a frying pan.

        Cook time: 1 hour

        Estimated Cost: $10

        Serve: 2

        Ingredients:

        • 4 pieces of pork chops
        • 2 tablespoons of Italian mixed herbs
        • 1/2 teaspoon of salt
        • 2 tablespoon of cooking wine
        • 1 table spoon of Worchestershire source
        • 1/2 teaspoon of sesame oil
        • 3 medium-sized potatoes
        • 1 cup of frozen mixed vegetables
        • 1 teaspoon of chicken powder
        • 1 pack of gravy mix (24 g), prepare according to pack instructions.

        Preparation:

        Pan-Fried Pork Chops
        1. Wash and tenderise pork chops by  banging on the meat with a hammer.
        2. Sprinkle salt, chicken powder and herbs on both side of the meat
        3. Mix all the rest of the seasoning in a bowl and soak the meat in it.
        4. Put them back in the fridge, and leave them soak for at least 2 hours  ( Ideally over-night )
        5. Heat oil in a large skillet over medium/high heat .When the oil is nice and hot, put pork chops in the pan, and cook on each side for about 4 to 5 minutes.

        Roasted Potatoes
        1. Preheat oven to 400°.
        2. Peel potatoes, cut them into quarters or eighths
        3. Bring to potatoes to boil for 10 mins. Drain out water.   
        4. Carmen's touch: give the potatoes a really good shake in the pot.
        5. Add potatoes to the baking dish and turn to thoroughly coat with oil. Season with salt.
        6. Roast at 400° for an hour, turning every 15 minutes until crisp on the outside and fork-tender on the inside. 

        Mixed Vegetables
        1. Defrost  a cup of frozen mixed veggies. 
        2. Used the same frying pan that you used for the meat before, and heat up a teaspoon of oil, fry onions and add in the vegetables. sprinkle some salt on the top
        3. Fry for 1-2 minutes

        And finally, serve food with gravy , salt and pepper...

        Salmon, Cucumber And Egg Sushi Rolls Recipe: Easy And Light

        My husband and I are both big sushi fans. Such big sushi fans in fact, that we named a day of the week "Sushi Tuesday". When we were living in Hong Kong every Tuesday we would visit our favourite sushi place in our neighbourhood Tai Hang. Why Tuesday? That's when the fresh catch would come in.

        Now that we are in New York, I figured that if I could make it at home, we could have it as often as we want without spending a lot of money! Sushi is actually super easy to make. There's minimum washing up and it goes down well with a nice glass of white wine. Perfect for a romantic night in cuddling up on the sofa! 

        It is also a very versatile dish, you can fill sushi with almost anything you like. So don't be shy, be creative and go crazy!


        Cook Time: 40 minutes


        Serves: 4

        Ingredients:

        • 4 tablespoons rice vinegar
        • 4 sheets of Nori (dry seaweed)
        • 2 teaspoons sugar
        • 1/2 teaspoons salt
        • 1 cup of sushi rice
        • 1 small pack of smoked salmon (100g)
        • 1 small cucumber
        • 2 eggs 
        Preparation:
         
        Rice Prep
        • In a medium saucepan, bring 1 1/2 cups water to a boil. Add rice, and stir. Reduce heat, cover, and simmer for 20 minutes. 
        • In a small bowl, mix the rice vinegar, sugar ,and salt. 
        • When the rice is ready, pour in the prepared vinegar mixture over the rice. 
        • Stir the rice gently in vertical motion  with one hand, while fanning the rice with a paper in the other hand until the rice is cooled to room temperature.  

        Roll Prep:
        • Lay out a sheet of seaweed on a bamboo sushi mat. Wet your hands. Using your hands, spread a thin layer of rice on the seaweed, and press into a thin layer. 
        • Arrange 1/4 of the cucumber, egg and smoked salmon, in a line down the center of the rice. Lift the end of the mat, and gently roll it over the ingredients, pressing lightly. Roll it forward to make a complete roll. Repeat with the rest of the ingredients.  
        • Cut each roll into 4 to 6 slices using a wet, sharp knife. 
        • Serve with soy sauce, wasabi and pickled ginger

            Carmen's touch : Keep your hands wet, so the rice does not stick to your hands.

            Husband Says: "Pure sushi love. I'll eat them all if she doesn't eat quickly. True story."

                Broccoli, Potato And Cheese Soup Recipe : Feel Good Home Cookin'

                I originally discovered this recipe for broccoli and potato soup on About.com after searching for ways to use some old broccoli and potatoes in the Fridge (shh! Don't tell my husband!) Just so happens I like cheese. Yes I do. Who doesn't? I thought adding some cheese would go well with this soup and make it more creamy. 

                The original recipe also called for celery but I took it out because I don't like celery. Sorry celery. Not in this kitchen. 

                 

                Cook Time: 30 minutes

                Serves 4-5

                Ingredients:

                • 2 tsp olive oil
                • 1/2 medium onion, finely chopped (about 3/4 cup)
                • 1 medium potato, peeled and cubed
                • 4 cups fresh broccoli, including stems, chopped
                • 2 cups low-sodium, fat-free chicken or vegetable broth
                • 1 1/2 cups milk
                • Carmen's touch: 3/4 cup grated Monterey jack cheese

                Preparation:

                1. Heat oil on medium heat in a soup pot. Gently fry onion for 3minutes.
                2. Add potato, chopped broccoli, and cheese followed by the broth and milk. Bring to a boil, then reduce heat, cover and simmer for 20 minutes, until vegetables are tender.
                3. Allow soup to cool slightly, then transfer to a blender in 2-3 batches, and blend until smooth.
                4. Return soup to pot and heat gently until ready to serve.
                Husband Says: "Five stars! Winner! Will visit the Carmen Kitchen again soon. No Gordon Ramsey Kitchen Nightmare here."
